Packaging Coffee
Ideally you do not want to store coffee for long, especially if it has been ground. Once coffee has been roasted, they should be brewed as soon as possible.
Roasted coffee is stored in a variety of packaging types; you want storage to be air-tight and cool. The risk factors for reducing coffee flavor are, in order: regular air, moisture, heat, and light.
If the store-packaing has a one-way valve then the beans stay fresher. These valves allow Co2 to escape, but new air does not enter the bag.
If you can buy coffee that is freshly roasted locally to you, that is the best. Store it at home in an airtight container, perferably one that keeps the beans dark; and in the fridge.
A good roaster will not only use one-way valves on their packages, but will also flush the bag with nitrogen, before sealing.
If you buy your coffee already ground, then it is even more important to store it properly, and not to store it for too long. Ground coffees sometimes come in a 'brick' format, and that can help preserve freshness.
